Job description

Job Purpose

Responsible for supervising the cold production unit which will prepare all food to a high standard, including, fresh salads, filled baguettes, rolls, various desserts, as well as an agreed food to go range for delivered catering and all retail units. This will consist of organising and processing internal orders, organising the team’s day to day preparation, and ordering all food.

 

Support the UGCL Chef Manager and Head Chef with the delivery of a market leading customer experience, achieving food cost targets and focusing on great execution of the food offer, whilst following set recipe specifications and costings. To remain abreast of current and forthcoming food trends and dietary requirements. All of this is underpinned by a passion for food quality and presentation.

 

Main Duties and Responsibilities

1. Maintain a high standard of food preparation and presentation of food and incorporate new ideas or technology as it becomes available.

2. Be progressive and forward thinking, have up-to-date knowledge, awareness and interest in current and future food to go and industry trends, be at the cusp of creative food innovation.

3. Manage the control of food items ensuring compliance with company policies is always achieved. This will include supporting and owning monthly unit stocktakes.

4. Demonstrate competence and compliance with all the processes and operating procedures required within their day-to-day job.

5. Ensure food standards and costs are consistently achieved and maintained, ensuring all recipes are followed.

6. Ensure the end-to-end ordering process, support the UGCL Chef Manager and Head Chef in ensuring that relevant food safety compliance and administrative requirements including Natashia’s Law are met.

7. Ensure food safety compliance is the highest priority by meeting all legislative and policy requirements.

8. Build and maintain an expert knowledge of food preparation and presentation whilst maintaining a flexible skill set ensuring ability to support other catering outlets.

 

Knowledge, Qualifications, Skills and Experience

Knowledge

Essential:

A1 Food Safety Level 3.

A2 City and Guilds 706/1 & 706/2 or HNC/HND equivalent.

A3 Allergen awareness Level 3 including Natasha’s Law & Nutritional compliance.

A4 Strong understanding of food safety standards and HACCP.

A5 Good working knowledge of Food Safety and Health and Safety Awareness.

 

Skills

Essential:

C1 An ability to demonstrate the competencies to undertake the duties associated with this level of post having acquired the necessary knowledge and skills in a similar role elsewhere.

C2 Excellent time management skills.

C3 Ability to work well under pressure.

C4 Good computer skills and experience.

C5 Excellent communication and interpersonal skills, including people management and stakeholder engagement.

C6 Adaptable and flexible approach to work.

C7 Strong organisational and customer service skills.

C8 Team player who is committed and enthusiastic.

Experience

Essential:

E1 Proven Chef experience in a food production or food service environment, or similar experience in a customer facing environment.

E2 Experience of planning menus and ordering food in a large-scale environment.

E3 Experience of working independently and whilst guiding a team.

E4 Previous experience in a team leader or production supervisor role.

 

Terms & Conditions

For a well-known Glasgow brand.

Salary will be £15.00 - £16.00 per hour depending on experience.

 

This role is full time with a working pattern of 37.5 hours per week, Sunday – Thursday.
